as fresh as it gets
Having vegetables in my own backyard is a first for me – and one thing that amazes me about our asparagus (besides how delicious it is) is how fast it grows!
There is nothing like home-grown vegetables and I won’t be getting sick of our asparagus any time soon.
Here are some recipes I found on some food blogs:
- Asparagus Raviolis and Spring Greens
- Angel Hair with Asparagus, Sun-Dried Tomatoes and Pine Nuts
- Hot Asparagus Dip
- Panko-Pecan Asparagus
- Asparagus and Strawberry Tart
- Lentil, Goat Cheese, and Asparagus Salad

April 22, 2009 at 1:02 pmHow long have you been growing your asparagus? I want to try that this year, I’ve heard that they’re great to grow and Hubby and I eat TONS of it. But my only hold-back is that apparently it takes 5 years to get a crop!
Yours looks great though!

April 22, 2009 at 5:17 pmI lucked out, and moved into a house where the asparagus was already thriving! I don’t know much about this, but I have heard that there are new hybrid varieties that bear after just two years.

April 22, 2009 at 5:18 pmand we certainly don’t do anything to help it grow, it just pops up… amid the weeds… we are not gardeners by any means!

April 23, 2009 at 10:30 amEllie,
I just tried this amazing Asparagus Medley recipe: http://allrecipes.com/Recipe/Asparagus-Avocado-Medley/Detail.aspx
They recommend everything raw but the asparagus, I heated up the onions, peppers, mushrooms and zuccs. It turned out delicious! The sauce really adds a unique flavor as well.
Enjoy!

I can’t wait to get my own house, with a big backyard where I’ll be able to grow vegetables like you. This is satisfying, no?

April 29, 2009 at 11:16 amLovely. I’d give anything to have a back yard. Currently, I am limited to growing plants in metal pails. My tomatoes did pretty well last year.
