this week’s recipe: ribollita

February 16th, 2010 · 5 Comments

This was an obvious choice for this week’s recipe, because Ribollita is an Italian soup which is near and dear to my heart, and perfect for cold weather. In college, I spent a semester in Florence and although I had no eating-out budget (a crime when you’re in Italy!) I did treat myself to a big bowl of Ribollita soup once or twice a week, bought from a market down the street from my apartment. (In case you’re lucky enough to be visiting Florence in the near future, go to the Mercato Centrale and walk all the way to the right of the building. Toward the front there is a delicious little restaurant called Nerbone, much loved by locals and with the best Ribollita I’ve ever had). But if you’re like me and not visiting Florence any time soon, this recipe from 101 Cookbooks might do the trick. Ribollita is a thick soup full of vegetables, and a good way to put a stale loaf of bread to use. Trust me.

  1. this seems silly to point out, and I don’t know that they would care, but I think it’s 101 Cookbooks. but i LOVE this new section of your blog:) keep up the great posting!! sorry to be that annoying person who points out randomness that maybe/probably doesn’t matter…

  2. oops! thanks!!

  3. I read her site and somehow I missed this one, glad you posted it. I’m loving veggie soups with greens lately, so I’ll have to try it out.

  4. Making this for sure. I’m not a vegetarian, but I have a love for beans, especially white beans, that no one I know shares. This sounds like the perfect recipe for when I’m bored of my usual white bean routine.

  5. Oh well, in Florence all the prices of food are a crime, especially in the center.
This kind of dish is a well known recipe here in Italy, and it’s very similar also here in le Marche, but we call it “Minestrone” =)
(there are also other ways to do it, e.g. overcooking al the mix of vegetables, and it that case it’s a “Fricchiò”)
Sorry I can’t resist to tell you because I know it may sound weird =P
