This Week’s Recipe: Pad Thai Noodle Salad

My Mom and I had the best dinner at a Thai restaurant in Pittsburgh called Silk Elephant. If you ever go to Pittsburgh, I whole-heartedly recommend that place. It was the most authentic Thai meal I’ve had since our big Thailand trip a few years ago, and even the mango and sticky rice we ordered for dessert was almost as good as the real thing. So for this week’s recipe, I knew I wanted to find something Thai. Ele from Kitchenist had the answer with her Pad Thai Noodle Salad. It’s loaded with vegetables and that irresistible combination of tamarind paste, lime juice, fish sauce, and sugar.

  1. glad you had fun in Pittsburgh, I think it’s a fun place to go. We were there this weekend and went to our favorite brunch place coca cafe. That mango slaw is on my menu for this week, I can’t resist thai flavors.

  4. I knew I would have to add this to my list when I saw it too. Pad thai is so yummy! Also I made the mango slaw last night and I turned out great. Barely put a dent in all the cabbage I have from my CSA, but I will gladly make it again!

  5. Oh! I wonder if I can get my husband to try this. He has been obsessed with chicken pad thai lately, and this looks like a much healthier option.
