Oh! I wonder if I can get my husband to try this. He has been obsessed with chicken pad thai lately, and this looks like a much healthier option.

I knew I would have to add this to my list when I saw it too. Pad thai is so yummy! Also I made the mango slaw last night and I turned out great. Barely put a dent in all the cabbage I have from my CSA, but I will gladly make it again!

looks delish. I haven’t made anything like this before (like Kim, my husband isn’t a huge fan of thai either)…but think I will give it a whirl!

Ooo! That looks delicious! I’m definitely going to bookmark the recipe and give it a whirl. Thai food is one of my favs…not so much my husband’s but I’ll see if I can get him to at least try it with me!

glad you had fun in Pittsburgh, I think it’s a fun place to go. We were there this weekend and went to our favorite brunch place coca cafe. That mango slaw is on my menu for this week, I can’t resist thai flavors.
