this week’s recipe: finnish pancakes

Let’s keep it simple this week, shall we? Here’s a secret: my husband and I are in the midst of buying our first house (huge grin!) and as if that hasn’t made life crazy enough, my car conked out and will cost me more than this month’s rent (huge tears).

So I could use some comfort food right about now, and these Finnish pancakes from Back to Her Roots are calling my name. Thin pancakes beat thick pancakes any day. It’s true.

hooray for a house! it’s a great time to buy (unfortunately, i bought a couple years ago at the peak… sad, sad story). sorry about the car problems. they’re the worst.

awww, congrats on the decision on buying a house! i’m sure this must be such an exciting stage for you two!

so sorry to hear about the car. last month, we had 2 collisions happened on the same week on our car and it was a pretty stressful moment, so i know how you feel.

those finnish style pancake looks divine! i like thinner pancakes too :)

Buying a house, WOOHOO!! Hope all goes smoothly! I know how crazy that can be. Boo with the car tho. :( And unfortunately, unexpected expenses only get worse once you buy a house, but at least you’ll get to have lots of fun along the way! Good luck with everything!

i lived in old north durham before buying a house in northgate park a few months ago. both are such great neighborhoods. good luck! :)

Congrats on buying a house. It’s scary and exciting at the same time… but, oh so worth it!
