this week’s recipe: butternut squash and bacon risotto

My husband and I have offered to host Thanksgiving this year for our moms, uncles, my grandfather, and our siblings. Nevermind that we will have moved into our new house less than one month prior, and will start (and complete!) a kitchen renovation between now and then. And have never (successfully) cooked a turkey. Yeah. It’s cool, don’t worry about it.

My advice on the turkey is actually NOT to start early. Seriously, I made a 22 lbs bird every year and really it only takes like, 4 hours to cook. So many people dry out turkey. Don’t be nervous! It’s usually fine if you try less! :)

butternut squash risotto is my favorite meal ever to make (if I have the time!) I don’t know why I’ve never though to make it with a thanksgiving meal before!

My advice is….when in doubt, order from Weaver Street Market! :P Just kidding–I am sure you’ll be fine, and it’s rockin that you guys just moved into a new house! I didn’t know that! xoxo

wow! that is quite ambitious of you two! i’ll have to try this recipe soon. it might just be the perfect way to use that squash i bought last week… :)
