As always, I’m on the lookout for simple, healthy meals that are easy to make, and this Spinach and White Bean Soup from Lemons and Anchovies looks just about perfect. Chances are, you’ve got most of these ingredients in the cabinet already!

  5. I made this tonight and it was super! I added some fresh thyme, basil and rosemary and a small bit of chopped chipotle I had in the fridge. I also added a bit of parm while it was simmering. It was bangin!
