this week’s recipe: skin beauty salad

This salad does double-duty for me: I’m constantly trying to come up with ways to get more vegetables in my diet. Always a struggle. And secondly, winter (even this mild sorta-winter) does a number on my skin. Introducing Scandi Foodie’s Skin Beauty Salad, with chickpeas, spinach, almonds, zucchini, and almonds. Yum!

Thankyou for posting this! I’ve just found at least 3 other recipes that I want to try, but this I can make tomorrow because all the ingredients are in my house! Yum.
