Guest Post: Caramelized Banana Ice Cream

Melissa is a food blogger extraordinaire with an affinity for baking and a definite sweet tooth (you may know her from her blog The Faux Martha; if not, bookmark it quick!). Please welcome Melissa to Mint today as she shares this wonderful recipe! —Ellie

Is there anything better than a dessert whipped together in 5 minutes? One that your kitchen-phobic husband can make. Might I add, one that your kitchen-phobic husband can create. I take zero recognition for this (minus the ice cream recipe). My husband created this little number a couple months ago. All by himself! [Insert proud wife here.] Inspired by memories of Bananas Foster from his childhood and a recent trip to our favorite sandwich shop, Grahamwich, Caramelized Banana Ice Cream was birthed. And we’ve been eating it ever since. It’s dangerously quick to make. And dangerously delicious. Don’t say I didn’t warn you.

Caramelized Banana Ice Cream
serves 2

1 ripe banana
1 tbsp. brown sugar
1 tbsp. butter, salted
dash of sea salt
vanilla ice cream (homemade or store bought)

1. Cut banana into 1/2″ thick slices. Cover in brown sugar.
2. In a non-stick pan, melt butter on medium-high heat until it just begins to bubble. Add bananas to pan, cooking for 1 minute on each side. Add a dash of sea salt for that salty/sweet goodness.
3. Remove from heat and pour over prepared ice cream making sure to use every last drop. Serve immediately. Do I even need to say that?!
