In the Kitchen: Happyolks

Kelsey, from Happyolks, might just be one of my favorite food bloggers. She has a way with words. And and a way with the camera, which she shares with her main man, Shaun. Her ability to capture the ordinary moments of life and somehow make them magic is goose-bump provoking. Every single time. She is a real gem. But I’ll let you decide for yourself. And with that I give you Happyolks.

What is your best memory in the kitchen (current or past)?
We will be saying our goodbyes to this kitchen in a few weeks as we pack up and make a big move, so I’ve recently been counting all the great memories and lessons experienced here over the past year. It has been a space for deep conversation, epic meltdowns, grand epiphanies, and the very best hugs. Although I always acted irritated, the times when Shaun came up behind me and wrapped me in a bear hug when I was in the middle of washing leeks or cleaning something will be my most sacred memories here.

Whats the best thing about your kitchen?
It has this old-fashioned drop down ironing table that I have admittedly never used. It’s cute. Gives the whole place character. My kitchen has a lot of character, and all the fixtures are pretty old so I don’t ever have to worry about making too much of a mess and ruining anything.

What is your favorite meal to prepare?
A salad of seasonal vegetables and crunchy lettuces chopped up with fresh herbs, legumes, a light grain, fresh olive oil.  Simple, humble, but endlessly satisfying.

What does your dream kitchen look like?
You know, I don’t really have one. Is that bad? As we’ve begun the process of looking for new apartments, my only condition is a big window. Keep me where the light is, and I can make it work.

Lisa Ling. Erin Brockovich. Barbara Kingsolver.

    I love Kelsey! Her blog is such an inspiration and I really appreciate her beautiful writing. But, more than anything, I appreciate that she’s such a warm and kind person. So glad to see her featured here!

    Beautiful beautiful interview and foreword! I am also totally in love with Happyolks and adore the fact that they just ARE. No fuss, no super stylish. Just pure foodie joy!
