Pinned it/Made it: Chipotle Sweet Potato Tacos

Oh you guys. Remember my request a while back for a Mint contributor? I got so many wonderful applications that I could not just pick one, and over the next month I’ll be introducing the new people who are going to be contributing to Mint. It’s a talented group, here to share fashion round-ups, food themed posts, artist interviews, interior design posts, and decorating tips. Just between you and me, it’s not easy to loosen my hold on Mint, my baby, my four-year-old pet project. But these folks bring such talent to the table that I know we’re all in for a treat. I’m excited to introduce our first new contributor to you today, Melissa from The Faux Martha. She’s great. You’re going to just love her. Today she’s sharing a new monthly post called Pinned it/Made it, featuring recipes she found, pinned, made, and loved. She’ll be with us every Wednesday to talk food. Take it away, Melissa! —Ellie

Hi. I’m Melissa, and I’m a pinterest-aholic. I often find myself saying things like—Oh, I pinned that recipe a couple days ago. And—Shoot, I’m staying up late pinning again. Most recently I’ve found myself proudly chanting—Pinned it, made it!—as I did with these Chipotle Sweet Potato Tacos from Naturally Ella. These little gems have become a favorite in our house. The recipe calls for simple ingredients, that once combined, make a splash of flavor. Spicy, sweet, and sour—they are divine. We add red bell pepper to the potato/bean mixture to squeeze in some extra veggies. And usually double the recipe since one night of these is never enough. If you can’t handle the heat, reduce the amount of chipotles. Honestly, I can’t think of an excuse not to pin make these.
