I was asked to bring a macaroni salad to a picnic, and nearly broke out in hives thinking about it. A salad laced in mayo on a hot summer day? It sounds like an oxymoron. I wanted something light, fresh, and summery. Of course Heidi, from 101 Cookbooks, came through. A peppery macaroni salad with a light green onion dressing, tossed with apples and arugula (or kale). It was perfect.
