Most nights I have no idea what I’m making for dinner. I typically stare into the fridge, then the pantry, and back to the fridge just hoping something pops out. Sweet potatoes stood out in particular this night. But not the normal sweet potato and butter. So I took the leap. Read the detailed recipe, and made gnocchi for the first time. A Couple Cooks, I owe you. I’m in love.

Love your idea to make something that you pin! I need to start doing this–I have so many different recipes and dishes that I’ve pinned over the past year and I still have yet to make most of them–must change this. These look great!
