It’s been a snowy, lazy week which calls for soup. The non-fussy, pantry-staple kind. Thankfully, I came across Veggie Tortilla Soup from Let’s Dish that fit the bill perfectly. Ready in under an hour. Topped with toasted whole wheat tortilla slices, cheese, and avocado. We subbed in canned tomato sauce and used less than the specified amount. The pantry is looking a little sparse these days. But the soup didn’t notice one bit. This recipe is a winner.
