I’m always looking for new ways to cook brussels sprouts. Most days I like them lightly sautéed. But other days they leave me wishing for a recipe with a little more umpfff! So I went digging and came across the lovely blog Veggie and The Beast. Her Brussels Sprout Quinoa Gratin was a huge hit. We’ve made it twice in the last couple of weeks. I subbed the cheeses for cheddar and parmesan only because I’m a picky cheese eater. If brussels sprouts have gotten you down in the past, give em one more try with this recipe.
