I’m always looking for new ways to cook brussels sprouts. Most days I like them lightly sautéed. But other days they leave me wishing for a recipe with a little more umpfff! So I went digging and came across the lovely blog Veggie and The Beast. Her Brussels Sprout Quinoa Gratin was a huge hit. We’ve made it twice in the last couple of weeks. I subbed the cheeses for cheddar and parmesan only because I’m a picky cheese eater. If brussels sprouts have gotten you down in the past, give em one more try with this recipe.

Yumm!! This sounds so delicious, I’d definitely like to try it out. My love for brussel sprouts is relatively newly acquired, but it is a love now.

Thanks! Looking forward to trying this one. Another simple way to prepare brussel sprouts: shredded and stir-fried with garlic, lots of thyme and a hint of lemon.
