This salad does double-duty for me: I’m constantly trying to come up with ways to get more vegetables in my diet. Always a struggle. And secondly, winter (even this mild sorta-winter) does a number on my skin. Introducing Scandi Foodie’s Skin Beauty Salad, with chickpeas, spinach, almonds, zucchini, and almonds. Yum!

Scandi Foodie has a huge recipe index, with foods inspired from many different cultures, and always healthy (with lots of gluten-free recipes, for those interested). Her prop-stylist background means gorgeous photos to boot.

Brendan and I have been enjoying a big pot of vegetable soup this week, topped with crumbled bacon and a little bit of sharp white cheese. There’s really nothing better in the winter than a hot bowl of soup with crusty bread (and knowing you’re getting in all your veggies, to boot). Heidi Swanson’s soup uses Indian curry powder, coconut milk, and lentils (or green split peas). Yum!

Nole Garey shares a delicious cocktail recipe each week on her blog Oh So Beautiful Paper, and since today’s the first day back to work after a long weekend for many of us, I thought a cocktail might be in order. Cheers!

On Sunday I bought some pre-made sugar cookie dough at the grocery store, but my husband was horrified — apparently the absence of chocolate chips was almost a deal breaker. So we mixed in some walnuts, added a dollop of blackberry jam on top, and now I just want to eat cookies all day long. Golubka’s recent recipe for Lady Apple and Cranberry Cookies might keep us busy next Sunday. (What New Year’s resolution?) Besides, have you ever seen more beautiful cookies?

This weekend Brendan and I went to Neomonde in Raleigh, which was hands-down the best Mediterranean food I’ve ever had. Ever. I wasn’t even a big baklava fan until this weekend, when I realized the problem was I’d never had good baklava. So if you’re local, run over to Neomonde and be sure to get the Bird’s Nest for dessert. But if you’re not local, I came across this recipe for Pistachio Baklava Cake which is gorgeous and delicious, I’m sure. More photos and the full recipe on Hungry Rabbit.
