I was a little late to jump on the refrigerator/overnight oatmeal bandwagon, but I love it now. It’s so nice to have something nourishing, filling and delicious ready to go the second I roll out of bed. But as temperatures drop and my tile floor gets so cold it threatens to suck my life force right out of my feet, cold oats don’t sound quite as appealing. So I’m jumping on a warmer bandwagon: baked oatmeal. This week I whipped up an Apple Cinnamon Baked Oatmeal from Two Peas and Their Pod. I used one whole egg rather than 2 whites, and I added dried dates, because I truly believe dried dates are a gift from heaven. The texture of baked oatmeal is a little more like bread pudding than traditional stovetop oats, so it even feels a little decadent. Make it in advance and zap it in the microwave for a hearty, quick (and warm!) breakfast.
